The Burgh, previously trading as Finlay's, opened completely smoke-free in December 2004. After a revamp and name change, owners London & Edinburgh Inns Ltd, brought in a smoke-free policy to complement the new image.
Traditionally a working man's smoking and drinking pub just off Princes Street, The Burgh now attracts professional types with its fresh food and large wine list in a smoke-free environment.
Manager Paul Houston explains: "Most people do not want to smoke when eating, so opening up smoke-free was a way of ensuring that the clientele changed towards our target market".
Advertising boards on the pavement outside proclaim the smoke-free status and the city centre bar gets a great response from tourists, especially those from Australia, Canada and Ireland, and staff are happier with the cleaner, fresher atmosphere and not smelling of stale smoke at the end of their shift.
Mr Houston adds: "The effect on trade has been pretty much what we anticipated, liquor sales are down slightly on last year but the phenomenal growth in food sales has meant that year on year we are trading approximately 25 per cent up".
He has this advice for other businesses thinking of going smoke-free: "If you are the only smoke-free business in your area, advertising will make sure that any customers you may lose will be replaced by ones that want a smoke-free atmosphere. However, most importantly it is a positive move, hence the reason we advertise as smoke-free, which we feel sounds much more positive than non-smoking".
